Smoked Wings With Sweet Potato Waffles

The Wings

  • 2 Pounds Whole Chicken Wings

  • 1 Tablespoons Kosher Salt

  • 1 Tablespoons Fresh Ground Black Pepper

  • 1 Tablespoon Paprika

  • 1 Tablespoon Garlic Powder

  • 2 Teaspoons Mustard Powder

  • 2 Tablespoons Brown Sugar

  • 1/4 Teaspoons Ground Cinnamon

  • 1 Teaspoons Ground Coriander

  • 1 Teaspoon Chili Powder

  • Tabasco Sauce

The Waffles

  • 1 1/4 Cups All-Purpose Flour

  • 1 1/4 Teaspoon Baking Powder

  • 1/2 Teaspoon Baking Soda

  • 1/2 Teaspoon Kosher Salt

  • 1 Tablespoon Brown Sugar

  • 1/4 Teaspoon Cinnamon

  • 1/4 Teaspoon Ground Ginger

  • 3 Tablespoons Unsalted Butter, Melted

  • 1 Cup Milk

  • 2 Eggs, Lightly Beaten

  • 1 Cup Pureed Sweet Potato

  • 18 marshmallows

  • 1/2 cup heavy cream

    Serves: 2 to 4


Preparing The Meal

Begin by preheating your smoker to 275°F. Add a handful of soaked wood chips while the smoker heats (for these wings I used Pecan Wood). While the smoker is preheating you can prepare your spice mix by combining the salt, black pepper, paprika, garlic powder, mustard powder, brown sugar, ground cinnamon, ground coriander, chili powder in a small bowl. You can make extra if you want to keep the spice rub on hand for future smoking and grilling. Set the wings on a baking sheet and sprinkle with some of the spice rub. Let the wings sit at room temperature while the smoker preheats. Once the smoker is ready, set the wings on the racks in the smoker, making sure to leave some space between wing to allow smoke to circulate. Smoke the wings, replenishing the wood chips as needed, for about 2 hours, until each piece has an internal temperature of 165°F and is deeply browned.

When the wings are near the end of the cooking time you can prep your waffle batter. Begin by preheating the waffle iron. In a medium bowl whisk together the flour, baking soda, baking powder, salt, ginger, and brown sugar. In a large bowl, whisk together the melted butter, eggs, milk, and pureed sweet potatoes. Then, stir in the dry ingredients, making sure to stir just until smooth.

Cook the waffles in the waffle iron according to the iron's instruction, until the waffles are browned and crispy on the outside. To keep cooked waffles warm, place them in a 225°F oven while you cook the remaining waffles. When the waffles are finished you can prepare the marshmallow sauce by heating the marshmallows and cream in a double boiler over boiling water, stirring until marshmallows are almost melted.

To serve, toss the wings with several dashes of Tabasco and sprinkle on some of the reserved spice mix. Top the waffles with some of the marshmallow sauce and serve alongside the wings.
