Meatloaf With Loaded Mashed Potatoes

Preparing The Meal

Begin by preheating your oven to 350°F. While the oven preheats, heat the olive oil in a large sauté pan over medium-high heat. Next, add the onions and mushrooms and cook until browned, about 8 minutes. Season the onions and mushrooms with salt, pepper, nutmeg, and red pepper flakes. Then, add the garlic and cook for 1 minute more. After one minute remove the onion-garlic mixture and set that aside to cool.

Next, add the bread crumbs, oatmeal, parsley, rosemary, and scallions to a small bowl. Pour the milk over the top, and allow it sit for several minutes. Then, in a large bowl, combine the ground beef, cooled onion-garlic mixture, and the eggs and season well with salt and black pepper. Once you have thoroughly mixed the meat, add the soaked bread crumb mixture and stir to combine well using your hands

Once the mixture is fully combined, form the meatloaf mixture into a loaf shape on a parchment paper lined baking sheet. When the loaf is formed, gently pat the top of the loaf so it’s flat and even. Then, mix the ketchup, honey, and Worcestershire sauce and brush the top of the loaf with the mixture.

Bake the loaf for about 1 hour, or until it reaches an internal temperature of 150°F in the center.

While the meatloaf cooks, you can prepare the mashed potatoes. Begin by placing the potatoes into a large pot of lightly salted water, and bring to a boil. Once boiling, reduce the heat to medium-low, and simmer until the potatoes are tender, about 20 minutes. Once, cooked drain the potatoes and return them to the pot. Melt the butter in a glass measuring cup with the milk in a microwave. Slowly add the milk and butter mixture to the potatoes with a potato masher until the potatoes have the desired consistency. Then, add the cheese, sour cream, scallions, and garlic powder and mix to thoroughly combine. Season with salt and pepper to taste.

Once the meatloaf has cooked, remove from the oven and allow to cool slightly. To serve, slice the meatloaf into individual portions. Spoon a serving of mashed potatoes onto a plate, and top with some extra sour cream. Set several slices of meatloaf alongside, and garnish with some chopped scallions. Serve immediately.

The Meatloaf

  • 1-1/2 to 2 lbs Ground Beef

  • 3 Tablespoons Olive Oil

  • 1 Medium Yellow Onion, Chopped

  • 3 Ounces White Button Mushrooms, Chopped

  • 5 Cloves Garlic, Minced

  • 1/4 Cup Flat Leaf Parsley, Chopped

  • 2 Sprigs Fresh Rosemary, Chopped

  • 3 Tablespoons Scallions, Chopped

  • Kosher Kosher Salt

  • Freshly Ground Black Pepper

  • 1/4 Teaspoon Red Pepper Flakes

  • 1/4 Teaspoon Freshly Grated Nutmeg

  • 1/2 Cup Fresh Bread Crumbs

  • 1/4 Cup Oatmeal

  • 1/2 Cup Milk

  • 2 Eggs

  • 1/4 Cup Ketchup

  • 1 Tablespoon Honey

  • 1 Teaspoon Worcestershire Sauce


The Potatoes

  • 1 lb Russet Potatoes, Peeled and Cut Into 1 Inch Cubes

  • 3 Tablespoons Butter

  • 2 to 4 Ounces Sharp Cheddar Cheese, Grated

  • 1/4 Cup Sour Cream

  • 1/4 Whole Milk

  • 2 Tablespoons Scallions, Chopped

  • 2 Teaspoons Garlic Powder

  • Kosher Salt

  • Freshly Ground Black Pepper
